Walnut avocado mango salad
Ayurvedic recipe Walnut-Avocado-Mango Salad

SERVES : 1
INGREDIENTS :
- 1 avocado, diced into 1/2" cubes
- 2 walnuts, soaked in warm water for 30 minutes, then roughly chopped
- 1/2 cup diced mango
- 1 tsp chopped fresh basil
- 1/2 tsp minced fresh ginger root
- 1 tbsp crushed pineapple in a little juice
- 1/2 tsp lemon juice
- Fresh ground black pepper to taste
- Rock salt to taste
- 1 tsp walnut oil
METHOD
- Combine the mango, walnuts and avocado in a bowl.
- In another bowl, whisk together the walnut oil, crushed pineapple with juice, lemon juice, basil, ginger, salt and pepper.
- Pour the dressing over the salad and blend gently.
