Tropical Chicken and Farfalle Salad

PREPARATION TIME : 30 minutes

COOKING TIME : 5 minutes

INGREDIENTS
  • Boneless chicken, boiled and shredded1 cup (200 grams)
  • Farfalle (bow tie pasta), boiled1 cup
  • Tomato, diced1 medium
  • Carrot, diced1 medium
  • Green capsicum, diced1/2 medium

 

  • Yellow capsicum, diced1/2 medium
  • Olives, cut into roundels 8-10

 

FOR DRESSING :

  • Garlic, chopped
  • 4-5 cloves
  • Celery, finely chopped 2 inch stalkCrushed red chillies 1/2 teaspoon
  • Crushed red chillies 1/2 teaspoon
  • Lemon juice 2-3 tablespoons
  • Salt to taste
  • Fresh parsley, finely chopped 2 teaspoons

 

PREPARATION:

 

For dressing, combine garlic, celery, red chillies, lemon juice, salt and parsley. Mix well. In a bowl mix together pasta, chicken, carrot, capsicum, yellow bell pepper and olives. Pour the prepared dressing and toss. Serve immediately.
