Sitaphal basoondi

Sitafal Basundi is low calorie Indian dessert. It is a dense sweetened paste made by boiling milk on low heat until the milk is reduced by half.

Sitaphal Basoondi Recipe

INGREDIENTS :

  • Skimmed milk 1 ½ liters
  • Sitaphal pulp 1 cup
  • Sugar ½ cup
  • Green cardamom powder ½ tsp
  • Pistachios (sliced) 10-12
  • Rose petals (optional) 3-4

 

PREPARATION :

  • Bring the milk to a boil in a heavy bottomed pan on high heat.
  • Lower heat and simmer for half an hour.
  • Keep stirring so that the milk does not burn and stick to the bottom of the pan.
  • When the milk reduces to half the original quantity, add sugar.
  • Simmer for 5 more minutes.
  • Take the pan off the heat and set aside to cool.
  • When cool, add custard apple, green cardamom powder, sliced pistachios & charoil.
  • Transfer to serving bowl and garnish with almond silvers and rose patels.
  • Serve cold.
