Sitaphal basoondi
Sitafal Basundi is low calorie Indian dessert. It is a dense sweetened paste made by boiling milk on low heat until the milk is reduced by half.

INGREDIENTS :
- Skimmed milk 1 ½ liters
- Sitaphal pulp 1 cup
- Sugar ½ cup
- Green cardamom powder ½ tsp
- Pistachios (sliced) 10-12
- Rose petals (optional) 3-4
PREPARATION :
- Bring the milk to a boil in a heavy bottomed pan on high heat.
- Lower heat and simmer for half an hour.
- Keep stirring so that the milk does not burn and stick to the bottom of the pan.
- When the milk reduces to half the original quantity, add sugar.
- Simmer for 5 more minutes.
- Take the pan off the heat and set aside to cool.
- When cool, add custard apple, green cardamom powder, sliced pistachios & charoil.
- Transfer to serving bowl and garnish with almond silvers and rose patels.
- Serve cold.
