Sautéed Okra Recipe

SERVES : 1

INGREDIENTS :

  • 1 cup cut okra (chop each okra into 5-6 pieces)
  • 1 tbsp ghee (clarified butter) or olive oil
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • Rock salt to taste
  • 1 pinch hing (asafetida)

 

  • 1 tsp cumin seed
  • 1/2 tsp sweet paprika
  • 1 tsp chopped fresh cilantro

 

METHOD

 

  • Heat the ghee or oil in a non-stick pan. Add asafetida and cumin seeds. When the seeds turn a rich brown and fragrant, add the okra.
  • Sauté the okra, turning occasionally, until slightly brown at the edges and slightly crisp. Add the salt and powdered spices and stir well to coat the okra with the spices.
  • Garnish with the cilantro and serve warm with a whole grain and a lentil dish.

 

NOTE :Dry washed okra by patting with paper towels before you cut. Use a clean dry knife.
