Sautéed okra
Ayurvedic recipe Sautéed Okra

SERVES : 1
INGREDIENTS :
- 1 cup cut okra (chop each okra into 5-6 pieces)
- 1 tbsp ghee (clarified butter) or olive oil
- 1/2 tsp turmeric
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- Rock salt to taste
- 1 pinch hing (asafetida)
- 1 tsp cumin seed
- 1/2 tsp sweet paprika
- 1 tsp chopped fresh cilantro
METHOD
- Heat the ghee or oil in a non-stick pan. Add asafetida and cumin seeds. When the seeds turn a rich brown and fragrant, add the okra.
- Sauté the okra, turning occasionally, until slightly brown at the edges and slightly crisp. Add the salt and powdered spices and stir well to coat the okra with the spices.
- Garnish with the cilantro and serve warm with a whole grain and a lentil dish.
NOTE :Dry washed okra by patting with paper towels before you cut. Use a clean dry knife.
