Roasted capsicum and tomato dip
A delicious oil free recipe Roasted Capsicum and Tomato Dip

COOKING TIME : 30 - 35 min
SERVES : 4
INGREDIENTS :
- 2 red capsicums, roasted, peeled
- 4 semi-dried tomato halves
- 1 tablespoon balsamic (or red wine) vinegar
- 1 tablespoon lemon juice
- freshly ground black pepper to taste
METHOD
- Place capsicums, tomatoes, vinegar, lemon juice and pepper in a food processor and blend until smooth.
- If dip is too dry, add a little more vinegar.
COOKING TIP :Semi-dried tomato halves are available from delicatessens and selected supermarkets.
