Roasted Capsicum and Tomato Dip Recipe

PREPARATION TIME : 10 min

COOKING TIME : 30 - 35 min

SERVES : 4

INGREDIENTS :

  • 2 red capsicums, roasted, peeled
  • 4 semi-dried tomato halves
  • 1 tablespoon balsamic (or red wine) vinegar

 

  • 1 tablespoon lemon juice
  • freshly ground black pepper to taste

 

METHOD

  • Place capsicums, tomatoes, vinegar, lemon juice and pepper in a food processor and blend until smooth.
  • If dip is too dry, add a little more vinegar.

COOKING TIP :Semi-dried tomato halves are available from delicatessens and selected supermarkets.
