Ingredients For Rice Panki Recipe :
  • Rice flour, sieved :     1/2 cup
  • Skimmed milk yogurt :     8 tablespoons
  • Salt :     to taste
  • Green chilli paste :     1 teaspoon
  • Ginger paste :     1/2 teaspoon
  • Soda bicarbonate :     1/2 teaspoon
  • Banana leaves cut into 4 inch squares or circles :     8
  • Sprouted Green gram (ankurit moong) :     1/2 cup
  • Salt :     to taste
  • Black peppercorns, crushed :     3-4
  • Red chilli flakes :     1/4 teaspoon

Preparation Method for Rice Panki Recipe :

  • Take rice flour in a bowl. Add yogurt, salt and mix.
  • Add green chilli paste, ginger paste and mix.
  •  Add water as required to adjust batter to a pouring consistency. Add soda bicarbonate and mix. Set aside to ferment for about two hours.
  • Mix all the ingredients for the stuffing together.
  • Heat a non-stick tawa. Take banana leaf pieces.
  • Pour the rice batter on one banana leaf, place the stuffing in the centre and fold into half.
  • Place it on the non-stick tawa and cook. Turn and cook the other side similarly.
  • Serve in the leaf itself.
