Quinoa with Greens and Asparagus Recipe

SERVES : 1

INGREDIENTS :

  • 1/2 cup quinoa
  • 1 1/2 cups pure water
  • 1/2 cup diced asparagus stems and tips (keep tips separate)
  • 1/2 cup finely shredded greens of your choice
  • 1/8 tsp ground black pepper
  • Rock salt to taste(optional)
  • 1 tbsp ghee

 

METHOD

 

  • Wash the quinoa thoroughly by rinsing it several times. Drain.
  • Heat a pan and roast the quinoa dry for about 5 minutes, stirring constantly.
  • Add water, greens and asparagus stems, stir and bring to a boil.
  • Cover, reduce heat and cook at a gentle simmer for about 15 minutes until quinoa grains are translucent.
  • Heat ghee in a pan until clear. Add the asparagus tops and black pepper and stir-fry briefly, about 2 minutes.
  • Stir in the salt and the spiced asparagus tops into the quinoa.
  • Enjoy hot.
