INGREDIENTS
- 1 pound potatoes, peeled and quartered
- 1 pound fresh asparagus, trimmed
- 2 tablespoons butter or margarine, divided
- 1 tablespoon all-purpose flour
- 3/4 cup heavy whipping cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons dry bread crumbs
- 3 tablespoons grated Parmesan cheese
METHOD
- Take potatoes in a saucepan and cover with water and boil them in low heat.
- Cover them and cook for 15-20 minutes or until tender.
- Meanwhile, cut the tips off asparagus spear and keep them for garnish.
- Take a saucepan and cut the stalks into 1-in. pieces and cover with water. Bring to boil at low heat.Put cover and cook for 18-20 minutes or until it is tender.
- Drain asparagus and put them in a blender and puree it. Now, remove the potatoes and drain and mash them.

- Cook and stir for 2 minutes or until thickened. Stir in asparagus pieced, mashed potatoes, salt and pepper. Transfer to a greased shallow 1-1/2 quart baking dish.Put the asparagus tips on top.
- Melt remaining butter and lightly brush some over top and toss bread crumbs, Parmesan cheese and remaining butter, sprinkle over casserole.
- Bake it uncovered for 25-30 minutes at 350 degrees F.
