Pineapple-Raisin Chutney Recipe

SERVES : 4 - 6

INGREDIENTS :

  • 1 cup diced fresh pineapple (1/4" dice)
  • 1 tbsp ghee
  • 1 tbsp sweet raisins
  • 1 pinch hing (asafetida)
  • 1/4 tsp cumin seed, dry-roasted and crushed

 

  • 1/8 tsp turmeric
  • 1 pinch black pepper
  • 1/8 tsp ground cardamom
  • 1/2 tsp turbinado sugar
  • 1/8 tsp minced ginger
  • 1/4 tsp lemon juice
  • Rock salt to taste

 

METHOD

 

  • Heat ghee in a pan until it is clear.
  • Add the hing. Stir briefly, then reduce heat to medium and add the raisins. Stir until they plump up.
  • Add the pineapple and other ingredients. Stir briefly to mix well. Cook covered, stirring occasionally to prevent sticking or burning, until the fruit is tender, about 6-7 minutes.
  • Enjoy as a condiment with a main meal or on toast or crackers.
  • Provides all six tastes.
