Pineapple raisin chutney
Ayurvedic recipe Pineapple-Raisin Chutney

SERVES : 4 - 6
INGREDIENTS :
- 1 cup diced fresh pineapple (1/4" dice)
- 1 tbsp ghee
- 1 tbsp sweet raisins
- 1 pinch hing (asafetida)
- 1/4 tsp cumin seed, dry-roasted and crushed
- 1/8 tsp turmeric
- 1 pinch black pepper
- 1/8 tsp ground cardamom
- 1/2 tsp turbinado sugar
- 1/8 tsp minced ginger
- 1/4 tsp lemon juice
- Rock salt to taste
METHOD
- Heat ghee in a pan until it is clear.
- Add the hing. Stir briefly, then reduce heat to medium and add the raisins. Stir until they plump up.
- Add the pineapple and other ingredients. Stir briefly to mix well. Cook covered, stirring occasionally to prevent sticking or burning, until the fruit is tender, about 6-7 minutes.
- Enjoy as a condiment with a main meal or on toast or crackers.
- Provides all six tastes.
