Payesh Recipe
Payesh (bengali Rice Pudding) is a very popular dessert recipe for festive occasions.

Preparation Time : 10 mins
Cooking Time : 15 - 30 mins
SERVES : 2
INGREDIENTS :
- milk - 1 litre
- basmati rice - 1 handful
- 2 tbsp - pure ghee
- 1 piece - black cardamom
- 1 piece - bay leaves
- jaggery to taste
For Garnishing:
- kishmish/raisins
- broken cashew nuts
METHOD
- Take the milk and boil it. stir frequently till it thickens.
- Take a handful of rice in a vessel containing 2 tsp ghee, some bay leaves & a piece of black cardamom and saute them for 2 mins.
- Add the mixture to the milk and boil for some time.
- Be careful and don't overboil it.
- Add the jaggery to it and mix well.
- Sprinkle kishmish and broken cashew into it.
- Allow it to cool and serve in a bowl.
- It is better if served chilled.
