Pav Bhaji
Pav Bhaji
Pav bhaji is a fast food dish native to Maharashtrians and is popular in most metropolitan areas in India, particularly in the Maharashtrian city of Mumbai & Pune.
Pav in Marathi means bread, the word Marathi borrowed from Portuguese pão (lit., "bread"). Bhaji is a term for a curry and vegetable dish. Pav bhaji consists of the bhaji (a potato-based curry) and the pav, garnished with coriander and chopped onions. Pav is high in carbohydrates and fats (if served with butter), while bhaji, the vegetable-based curry portion, is high in carbohydrates.

INGREDIENTS
- Potato - 1/4 kgs
- Green peas - 100 gms
- Cauliflower - 1/2 or cabbage - 200 gms
- Capsicums - 2
- Tomatoes - 3 big
- Onions - 2
- Turmeric powder - 1/2 tsp
- Chilli powder
- Pav Bhaji masala powder - 1 tbsp
- Dhania - 1/2 tsp
- Butter - 50 gms
- Garlic paste - 2 tsp
- Salt to taste
- Coriander leaves - 1 tbsp(chop finely)
Grind to Paste:
- 1 Inch - Ginger
- 5 - Garlic cloves
- 1 - Onions
- 3 - Green chilies
- 2 - Cinnamon sticks
- 3 - Cloves
- 1/4 cup - Mint leaves
- 3 - Cardamoms
Preparation:
- Cut all vegetable into pieces and except potatoes and peas.
- Pressure cook vegetables, potatoes, peas. Do not cook capsicums.
- Peel and mash the potatoes keep aside.
- Cut onion and tomatoes finely.
- Heat butter in a shallow pan, fry the onions and garlic paste. Add tomatoes and chopped capsicums, fry till it is mash properly.
- Add mashed potatoes, other cooked vegetables, salt and all the spicy powders and add little water.
- Cook and mash thoroughly when it is boiling.
- When the mashed gravy becomes hard thick, add a blob of butter, sprinkle chopped onione and coriander leaves.
- Serve hot with buttered pav bread with lemon pieces. (Cut bun horizontally into half. Put butter on a tawa and melt. Apply inside and both outsides).
