Paneer Frankiei Recipe

SERVES : 4

INGREDIENTS :

  • Skimmed milk cottage cheese (paneer), 1/2 inch cubes 300 grams
  • Whole wheat flour (atta)1 cup

 

  • Salt to taste
  • Onions, roughly chopped 3 medium
  • Tomatoes, chopped 3 medium
  • Ginger paste 1 tablespoon
  • Garlic paste 1 tablespoon
  • Kashmiri red chilli powder 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Coriander powder 2 teaspoons
  • Lemon juice 2 tablespoons
  • Green chutney 8 teaspoons
  • Onions, sliced 2 medium

 

METHOD

Mix whole wheat flour and salt, add sufficient water and knead into a firm dough. Cover and keep for about fifteen minutes. Heat a non-stick pan, add roughly chopped onions, tomatoes, ginger paste, garlic paste, salt, Kashmiri red chilli powder, turmeric powder, coriander powder and stir. Cook till everything blends well and the excess moisture has dried up. Add lemon juice, mix and take off the heat. Add paneer cubes and mix lightly. Divide the filling into eight equal portions and keep aside. Divide the dough into eight equal sized balls and roll into rotis. Heat a tawa, place a roti and cook till both the sides are evenly cooked. Spread a teaspoon of green chutney all over the roti. Place a portion of paneer mixture on one side. Sprinkle some sliced onions over it and roll the roti. Similarly prepare the rest of the frankies. Wrap in aluminum foil and serve immediately.
