Candy Bar Fudge :

Make the best Chocolate Cannoli with this easy recipe.

 

Candy Bar Fudge
INGREDIENTS
  • 1/2 cup Butter
  • 1/3 cup Cocoa Powder (unsweetened)
  • 1/4 cup packed Brown Sugar
  • 1/4 cup Milk
  • 3-1/2 cups Confectioners' Sugar
  • 1 tsp Vanilla Extract
  • 30 individually wrapped Caramels (unwrapped)

 

  • 1 tbsp Water
  • 2 cups Salted Peanuts
  • 1/2 cup Chocolate Chips (semisweet)
  • 1/2 cup Milk Chocolate Chips

 

METHOD

  • Grease an 8x8 inch square baking pan.
  • Mix butter, cocoa powder, brown sugar and milk in a microwave safe bowl.
  • Stir in confectioners' sugar and vanilla extract. Pour the mixture into the prepared pan.
  • Mix caramels and water in a separate microwave-safe bowl and heat in the oven, until caramel melts
  • Stir in peanuts and spread this mixture over the chocolate layer.
  • In a separate microwave-safe bowl, combine semisweet and milk chocolate chips; and heat in the oven until melted.
  • Spread the mixture over the caramel layer.
  • Refrigerate for 2 hours or until firm.
  • Cut into desired shapes and serve.

 


Miniature Blue Cheese Balls with Winter Fruit :

This mixture is a terrific filling for stewed dried plums (prunes) and Majool dates. Make a party plate with all winter fruits – apricots, dried plums and dates – for variety.

 

Miniature Blue Cheese Balls with Winter Fruit
INGREDIENTS
  • 30 dried apricots
  • Water
  • 4 teaspoons pure vanilla extract
  • 2/3 cup coarsely chopped pecans
  • 4 ounces cream cheese cut in chunks and room temperature
  • 3 ounces (3/4 cup) Wisconsin blue cheese, crumbled
  • 1 tablespoon French brandy
  • 1/2 tablespoon grated yellow onion

METHOD

  • Place the apricots in a sauce pan. Add water barely to cover. Stir in vanilla. Bring the apricots to a boil, uncovered, and simmer until tender, 1-4 minutes, depending on the dryness of the apricots. Test with a fork. The apricots should be tender but not limp. Drain and dry well. Set aside.
  • Preheat the oven to 375°F (190°C).
  • Spread the pecans on a baking sheet. Toast the pecans for 4 to 5 minutes, until aromatic. Stir after 2 minutes and watch so the nuts do not scorch. Remove and pour pecans on waxed paper to cool. Whirl the pecans in a blender or food processor until very fine. Set aside.
  • Place the cream cheese, blue cheese and brandy in the bowl of a food processor. Pulse until all ingredients are well blended. Add the onion and pulse briefly to incorporate. (You may also blend the mixture in the bowl of an electric mixer.) Remove mixture to a bowl and refrigerate at least 2 hours.
  • Remove cheese mixture from refrigerator. Form miniature balls and dip tops in pecans. Place on an apricot, nut side up. Repeat until all mixture is used. The mixture is soft – if too soft, spoon onto apricots, rounding the top and sprinkle with nuts. Makes about 30 miniature balls.

Notes about the recipe: If a nonalcoholic mixture is preferred, substitute sherry extract. Start with 1/4 teaspoon and add to taste.

 


Honey Peanut Butter Fudge :

Creme De Menthe Brownies recipe is really very delicious easy to make for your Christmas Party.

 

Honey Peanut Butter Fudge
INGREDIENTS
  • 2 Egg Whites (stiffly beaten)
  • 4 cups Sugar
  • 1 cup Nuts (chopped)
  • 1 cup Water
  • 1 cup Honey
  • ½ cup Peanut Butter
  • 1 tsp Vanilla Extract

 

  • Shaved Creme de Menthe thins (recommended: Andes)
  • Chocolate frosting

 

METHOD

  • Mix one cup of sugar and ½ cup of water and boil at a temperature of 234°F to 238°F.
  • Pour the syrup gradually over beaten egg white. Set aside.
  • Now, boil the remaining three cups of sugar, honey, peanut butter and ½ cup of water together, at a temperature of 234°F to 238°F.
  • Slowly add this mixture to the first mixture.
  • Beat constantly, till the time the mixture becomes thick.
  • Add chopped nuts and vanilla extract.
  • Drop on to waxed paper by using teaspoon.
  • Leave aside for sometime, let the fudge set and then serve.

 


Apple Tart :

Apple Tart
INGREDIENTS
  • 3 Medium apples, peeled and cored
  • 1 Sheet (about 8 Ounce) frozen puff pastry, thawed
  • 3 tbsp Cinnamon sugar
  • 1/4 Cup apricot jam, melted
  • 2 tbsp Unsalted butter, melted

 

METHOD

  • Heat oven to 400 degree F.
  • Take the baking sheet and line it with parchment paper.
  • Smear the thawed pastry on parchment paper.
  • Pierce half inch border around the edge of pastry with the help of tines of a fork. Now pierce it all over.
  • Thinly slice the peeled apples and arrange these slices in four rows on pastry top.
  • You can overlap the slices if required. Leave the corners clear.
  • Apply melted butter on apples slices.
  • Sprinkle with cinnamon sugar and bake it for half an hour.
  • Now apply melted jam over baked apples.
  • Bake again until golden. It takes about 8 minutes.
  • Serve the apple tart warm.

 


Crab-Spinach Dip :

For your New year gathering try this delightful blend of flavors. It is sure to be a hit.

 

Crab-Spinach Dip
INGREDIENTS
  • 1 (9-ounce) package frozen creamed spinach
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/3 cup freshly grated Parmesan cheese
  • 1 (8-ounce) package crab meat
  • 3 green onions, chopped
  • 2 teaspoons lemon juice
  • 1/4 teaspoon hot sauce

 

  • Toasted baguette slices
  • Tortilla chips

METHOD

  • Thaw creamed spinach in microwave at MEDIUM (50% power) 5 to 6 minutes; set aside.
  • Combine all ingredients in a large bowl; stir well. Spoon into a greased shallow 1-quart baking dish.
  • Bake, uncovered, at 350°F(175°C) for 20 to 25 minutes or until thoroughly heated.
  • Serve with toasted baguette slices or pita chips.
