Mixed sprouts ussal
A delicious oil free recipe Mixed Sprouts Ussal

INGREDIENTS :
- Mixed sprouts (moong, matki, chana) 1 cup
- Mustard seeds 1/2 teaspoon
- Curry leaves 6-8
- Onions, finely chopped 2 medium
- Turmeric powder 1/2 teaspoon
- Red chilli powder 1/2 teaspoon
- Goda masala 1 teaspoon
- Jaggery (gur), grated 1 teaspoon
- Salt to taste
- Fresh coriander leaves, finely chopped 2 tablespoons
- Coconut, scraped 2 tablespoons
- Garlic 6-7 cloves
- Green chillies, roughly chopped 3-4
- Roasted cumin seeds 1 teaspoon
- Coconut, scraped 1/4 cup
METHOD
Grind garlic, green chillies, cumin seeds and scraped coconut to a smooth paste.Heat a non-stick pan, add mustard seeds and allow them to crackle. Add curry leaves and onions. Roast, stirring continuously till onions turn light golden. Add ground paste and cook on medium heat for three to four minutes. Add turmeric powder, red chilli powder, goda masala, jaggery and salt. Stir well. Add mixed sprouts, mix well and add enough water to just cover the mixture. Bring it to a boil and continue cooking on medium heat, stirring occasionally till the sprouts are cooked.
