Ingredients For Kancheepuram Idli Recipe :

  • black gram dal (wash :     1 cup

  • crushed black pepper :     1 teaspoon
  • ground ginger :     1-1/2 teaspoons
  • cumin seeds :     1 teaspoon
  • Salt to taste :    
  • sesame or any other :     1/4 cup
  • ghee :     1/4 cup
  • A few curry leaves :    
  • A little oil (extra) :    

Preparation Method for Kancheepuram Idli Recipe :

  • Soak the parboiled rice and black gram dal in 5 cups (2 imperial pints) water for 2 hours. Drain off the water completely.
  • Place the rice and dal in an electric blender or food processor. Blend ingredients into a coarse batter, adding a little extra water only if necessary. The batter should be of thick pouring consistency.
  • Place the batter in a large mixing bowl. Add the asafetida powder, crushed peppercorns, ginger, cumin seeds, and salt to taste. Allow to ferment for 24 hours. The batter should turn sour.
  • Just before making the idlis, heat the oil and ghee in a heavy frying pan or skillet. Add curry leaves and sauté for 2–3 minutes. Remove from the heat and add to the fermented batter. Mix thoroughly.
