Kabiraji Cutlet
A kabiraji cutlet is a special variation, where the coating is made of eggs along with the breadcrumbs.

SERVES : 4 - 6
INGREDIENT
- Minced mutton - 1 kg
- Onion - 2 (finely sliced) Eggs - 10
- Green chillies - 4 ; chopped
- Breadcrumbs - 1 cup
- Ginger paste - 4 tbsp
- Garlic paste - 4 tsp
- Asafoetida powder - 2 tsp
- Cumin powder - 4 tsp
- Coriander powder - 4 tsp
- Chilli powder - 2 tsp
- Salt to taste
- Sprigs of cilantro leaves
METHOD
- Mix together ginger paste, garlic paste, green chillies and cilantro leaves in a large bowl.
- Add the cumin, coriander, chilli and asafoetida powders followed by salt and mix thoroughly.
- Next mix the minced mutton and divide into equally sized cutlets about 1½ inch in diameter and ½ inch in thickness.
- Whisk eggs in a bowl and dip the above cutlets in the whisked egg and roll on breadcrumbs.
- Heat oil ,trickle the egg off the end of a spoon into the oil, and roll the cutlets onto this and fry for 5 minutes on each side over low heat.
- Serve hot with sliced onion.
