Kabiraji Cutlet

A kabiraji cutlet is a special variation, where the coating is made of eggs along with the breadcrumbs.

Kabiraji Cutlet Recipe

SERVES : 4 - 6

INGREDIENT

  • Minced mutton - 1 kg
  • Onion - 2 (finely sliced) Eggs - 10
  • Green chillies - 4 ; chopped
  • Breadcrumbs - 1 cup
  • Ginger paste - 4 tbsp
  • Garlic paste - 4 tsp
  • Asafoetida powder - 2 tsp
 

 

  • Cumin powder - 4 tsp
  • Coriander powder - 4 tsp
  • Chilli powder - 2 tsp
  • Salt to taste
  • Sprigs of cilantro leaves

 

METHOD

  • Mix together ginger paste, garlic paste, green chillies and cilantro leaves in a large bowl.
  • Add the cumin, coriander, chilli and asafoetida powders followed by salt and mix thoroughly.
  • Next mix the minced mutton and divide into equally sized cutlets about 1½ inch in diameter and ½ inch in thickness.
  • Whisk eggs in a bowl and dip the above cutlets in the whisked egg and roll on breadcrumbs.
  • Heat oil ,trickle the egg off the end of a spoon into the oil, and roll the cutlets onto this and fry for 5 minutes on each side over low heat.
  • Serve hot with sliced onion.
