Jacket Potatoes with Baked Beans Stuffing Recipe

COOKING TIME : 35 - 40 min

SERVES : 4

INGREDIENTS :

  • Potatoes 4 large
  • Baked beans 1 cup
  • Bay leaf 1
  • Onion , chopped 1 medium

 

  • Garlic, chopped 6 cloves
  • Tomato ketchup 1 tablespoon
  • Sea salt 1 teaspoon
  • Black pepper powder 1/4 teaspoon

 

METHOD

Parboil potatoes with skin. Drain, cool and halve. Scoop out the centre leaving a thick wall around. Pre-heat the oven to 200°C. Heat a non-stick pan, add bay leaf, onion and garlic and cook till the onion turns a light brown. Add tomato ketchup and mix well. Add baked beans, sea salt, pepper powder and stir. Bring it to a boil. Cool slightly. Fill the stuffing into the scooped out potato halves. Arrange them on a baking tray and bake in the preheated oven at 200°C for fifteen to twenty minutes. Serve hot.
