Green Beans and Asparagus Tips Salad for Vata Recipe

SERVES : 1

INGREDIENTS :

  • 1/2 cup diced green beans
  • 1/2 cup asparagus tips
  • 1 tsp extra-virgin olive oil
  • 1 tbsp toasted pine nuts
  • 1 tsp lemon juice
  • Fresh ground black pepper to taste

 

  • Rock salt to taste
  • 1 tsp fresh chopped tarragon
  • 1/2 tsp lemon zest

 

METHOD

  • Steam green beans and asparagus tips until tender but not mushy.
  • In a bowl, whisk together the olive oil, lemon juice, tarragon, lemon zest, salt and pepper.
  • Blend together the vegetables and the dressing and garnish with the toasted pine nuts.
  • Serve warm or at room temperature.
