Grated Veggie Salad Recipe

SERVES : 1

INGREDIENTS :

  • 1/4 cup grated carrot
  • 1/4 cup grated zucchini
  • 1/4 cup thinly shredded fennel bulb
  • 1/4 cup thinly shredded lettuce
  • Rock salt to taste (optional)
  • 1 pinch black pepper

 

  • 1 tsp lemon juice
  • 1 tsp extra-virgin olive oil
  • 1 tsp finely chopped fresh parsley

 

METHOD

  • Steam carrot and zucchini for 5-7 minutes. Drain. Combine carrot, zucchini, fennel, lettuce and parsley.
  • Prepare the dressing by whisking together the salt, pepper, lemon juice and olive oil.
  • Fold dressing into the salad and mix well.
  • Enjoy at room temperature.
