Grated veggie salad
Ayurvedic recipe Grated Veggie Salad
SERVES : 1
INGREDIENTS :
- 1/4 cup grated carrot
- 1/4 cup grated zucchini
- 1/4 cup thinly shredded fennel bulb
- 1/4 cup thinly shredded lettuce
- Rock salt to taste (optional)
- 1 pinch black pepper
- 1 tsp lemon juice
- 1 tsp extra-virgin olive oil
- 1 tsp finely chopped fresh parsley
METHOD
- Steam carrot and zucchini for 5-7 minutes. Drain. Combine carrot, zucchini, fennel, lettuce and parsley.
- Prepare the dressing by whisking together the salt, pepper, lemon juice and olive oil.
- Fold dressing into the salad and mix well.
- Enjoy at room temperature.
