Grated salad for vata
Ayurvedic recipe Grated Salad for Vata

SERVES : 1
INGREDIENTS :
- 1/4 cup grated carrot
- 1/4 cup grated cucumber
- 1/4 cup thinly grated beet
- 1/4 cup thinly grated zucchini
- 1 tsp chopped fresh basil
- 1 tsp chopped fresh parsley
- 1 tbsp lemon juice
- Sea salt to taste
- Fresh ground black pepper to taste
- 1 tsp ghee
- 1/2 tsp cumin seeds
METHOD
- Combine the carrot, cucumber, zucchini and fennel in a bowl.
- In another bowl, whisk together the lemon juice, olive oil, fresh herbs, salt and pepper.
- Pour the dressing over the salad and toss to coat.
- Heat ghee in a small skillet and add the cumin seeds. When the seeds turn brown and fragrant, pour the ghee-spice mixture over the salad.
- Mix well and serve immediately.
