Grated Salad for Vata Recipe

SERVES : 1

INGREDIENTS :

  • 1/4 cup grated carrot
  • 1/4 cup grated cucumber
  • 1/4 cup thinly grated beet
  • 1/4 cup thinly grated zucchini
  • 1 tsp chopped fresh basil
  • 1 tsp chopped fresh parsley

 

  • 1 tbsp lemon juice
  • Sea salt to taste
  • Fresh ground black pepper to taste
  • 1 tsp ghee
  • 1/2 tsp cumin seeds

 

METHOD

  • Combine the carrot, cucumber, zucchini and fennel in a bowl.
  • In another bowl, whisk together the lemon juice, olive oil, fresh herbs, salt and pepper.
  • Pour the dressing over the salad and toss to coat.
  • Heat ghee in a small skillet and add the cumin seeds. When the seeds turn brown and fragrant, pour the ghee-spice mixture over the salad.
  • Mix well and serve immediately.
