Grated Mango Pickle Recipe

Ingredients For Grated Mango Pickle Recipe :
  • large green mangoes :     4
  • fenugreek seeds :     1teaspoon
  • asafetida powder :     1 teaspoon
  • sesame oil :     1/2 cup
  • brown mustard seeds :     2 teaspoon
  • chilli powder :     1/4 cup
  • ground turmeric :     1/2 teaspoon
  • salt :     1/4 cup

Preparation Method for Grated Mango Pickle Recipe :

  • Peel and grate the mangoes. Set aside.
  • Dry-roast the fenugreek seeds and asafetida powder in a heavy saucepan for 3-4 minutes. Blend to a fine powder in an electric blender or food processor. Set aside.
  • Heat 1/2 cup sesame oil in a heavy frying pan or skillet. Add the mustard seeds. When they splutter, add the chilli powder and ground turmeric. Saute for 1 minute
  • Add the grated mango, salt and fenugreek/asafetida mixture. Continue cooking until the oil floats on top
  • Allow to cool completely and store in abottle.

This pickle will last for a month when stored in the refrigerator
