Grated Carrot Salad Recipe

SERVES : 1

INGREDIENTS :

  • 1 cup grated carrots
  • 1 tbsp sweet raisins
  • 1/2 tsp minced ginger
  • 1 tsp chopped cilantro
  • 1 tsp lemon juice
  • Rock salt to taste (optional)

 

  • 1/4 tsp fresh-ground black pepper
  • 1/2 tsp black or brown mustard seed
  • 1 pinch hing (asafetida)
  • 1 tbsp ghee

 

METHOD

  • Combine carrots, raisins, salt, pepper, cilantro, ginger and lemon juice in a bowl. Mix well.
  • Heat ghee in a pan until clear. Add mustard seeds and wait for them to pop. (Hold a lid over the pan to prevent the seeds from dancing everywhere). Add asafetida.
  • Pour the hot ghee-spice dressing on the salad. Mix well.
