  • (1lb) ghee (extra) :     2 cups
  • Bengal gram flour (b :     1 Cup (4 oz)
  • sugar :     2 cups (1 lb)

Preparation Method for Gram Flour Burfi Recipe :

  • Grease a plate evently with 2 tablespoons ghee.Set aside.
  • Heat I cup (8 oz) of the extra ghee in a heavy saucepan. Add the sifted Bengal gram flour. Stir thoroughly and set aside.
  • Now heat the sugar on a low heat, adding just enough water to cover the sugar, and make a syrup of one-string or thread consistency, i.e. 110-112C (230-234F). Strain the syrup to remove any scum.
  • Meanwhile, heat the remaining 1 cup (8 oz) ghee.
  • Add the Bengal gram flour/ghee mixture to the sugar syrup. Keep stirring on a low heat and remove any lamps. Gradually add the remaining heated ghee. Keep stirring until the ghee separates and floats on top.
  • When the mixture froths up, pour quickly onto the greased plate. Shake the plate gently to spread the burfi.
  • When the burfi has partly cooled, cut into pieces with a sharp,greased knife.
  • Store in an airtight container
