Diploma Cookies Recipe
Diploma cookies made using flour. A perfect recipe for a graduation day dessert.

INGREDIENTS
- 1/3 cup butter or margarine, softened
- 1/3 cup shortening
- 3/4 cup packed brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1 egg
- 1 1/2 cups Gold Medal® all-purpose flour
- 1/4 cup Gold Medal® whole wheat flour
- 3/4 cup semisweet chocolate chips, melted
METHOD
- Take the butter, shortening and brown sugar and beat them until creamy. Mix in baking powder, salt, vanilla and egg thoroughly and beat.
- Add flour and divide the dough into half. Cover and refrigerate for about 2 hours.
- Preheat the oven to 375°F. Take each half of dough and roll them into 15x6-inch rectangle on floured surface.
- Cut them lengthwise into three 15x2-inch strips, and then again crosswise into two 7 1/2x2- inch strips.
- Now, spread about 1 teaspoon melted chocolate over one strip to within 1/4 inch of one long side. Carefully roll them up, starting at long side with chocolate.
- Do this with remaining cookie strips and chocolate also.
- Finally, cut each roll into 2 pieces slightly to shape. Take a ungreased cookie sheet, and place cookies about 1 inch apart.
- Put them in oven and bake for about 8 to 10 minutes or until edges are firm. Cool completely.
- Place remaining chocolate in plastic bag and cut hole in corner and squeeze out chocolate to look like ties.
