Coriander Prawn and Mango Salad Recipe 

 

Coriander Prawn and Mango Salad

PREPARATION TIME : 20 minutes

COOKING TIME : 15 minutes

INGREDIENTS
  • Small prawns, shelled and headless 3/4 cup
  • Coriander and mint chutney 1/2 cup
  • Raw mango, peeled and cut into thin strips 1 small
  • Tomatoes 2 medium
  • Mustard paste 1 teaspoon

 

  • Salt to taste
  • Sugar 4-5 tablespoons
  • Black peppercorns, crushed 5-6
  • Lemon juice 1 teaspoon
  • Iceberg lettuce leaves , placed in iced water 4-5

 

PREPARATION:

 

Halve the tomatoes, remove seeds and cut into strips. Marinate prawns in coriander and mint chutney for about fifteen minutes. Heat a tawa and cook the prawns till done. Mix together raw mango strips, tomato strips, mustard paste, salt, sugar, crushed black peppercorns, lemon juice and one tablespoon of water. Add the grilled prawns and toss. Serve on a bed of iceberg lettuce.
