Carrot-Daikon Yogurt Salad for Vata Recipe

SERVES : 1

INGREDIENTS :

  • 1 tbsp grated carrot
  • 1 tbsp grated white daikon radish
  • 1/2 tsp minced fresh ginger root
  • 1/2 cup fresh plain yogurt
  • 1 large pinch fresh ground black pepper

 

  • 1 tsp ghee (clarified butter)
  • 1/2 tsp cumin seeds
  • 1 pinch asafetida
  • 1 pinch fenugreek powder
  • Rock salt to taste
  • 1 tsp chopped fresh cilantro

 

METHOD

  • Whip the yogurt until smooth and creamy.
  • Fold in the carrot, radish, ginger, pepper, salt and cilantro.
  • Heat the ghee in a small skillet.
  • Add the asafetida, cumin seeds and fenugreek and stir briefly to release aroma.
  • Pour the ghee-spice mixture over the raita and mix well.
  • Serve at room temperature.
