Carrot daikon yogurt salad for vata
Ayurvedic recipe Carrot-Daikon Yogurt Salad for Vata
SERVES : 1
INGREDIENTS :
- 1 tbsp grated carrot
- 1 tbsp grated white daikon radish
- 1/2 tsp minced fresh ginger root
- 1/2 cup fresh plain yogurt
- 1 large pinch fresh ground black pepper
- 1 tsp ghee (clarified butter)
- 1/2 tsp cumin seeds
- 1 pinch asafetida
- 1 pinch fenugreek powder
- Rock salt to taste
- 1 tsp chopped fresh cilantro
METHOD
- Whip the yogurt until smooth and creamy.
- Fold in the carrot, radish, ginger, pepper, salt and cilantro.
- Heat the ghee in a small skillet.
- Add the asafetida, cumin seeds and fenugreek and stir briefly to release aroma.
- Pour the ghee-spice mixture over the raita and mix well.
- Serve at room temperature.
