Cabbage pumpkin seed salad
Ayurvedic recipe Cabbage-Pumpkin Seed Salad

SERVES : 1
INGREDIENTS :
- 1/3 cup finely shredded green cabbage
- 1/3 cup finely shredded red cabbage
- 1/3 cup grated carrot
- 1/3 cup cooked garbanzo beans
- 1 tablespoon roasted pumpkin seeds
- 1 tbsp olive oil
- 1 tbsp lemon juice
- A few flakes of red chili pepper
- Rock or sea salt to taste
- Fresh ground black pepper to taste
- 1 tbsp chopped cilantro
METHOD
- Steam the cabbage and carrot for about 5 minutes.
- Combine the cabbage, carrot, garbanzos and pumpkin seeds in a bowl.
- Make the dressing by mixing together the olive oil, lemon juice, chili pepper flakes, salt, black pepper and cilantro.
- Pour the dressing over the salad and toss gently to coat.
