INGREDIENTS :
- Brown bread , 1 inch cubes1 slice
- Green capsicum, 1 inch cubes1 medium
- Onions 2 medium
- Tomatoes, seeded , 1 inch cubes 2 medium
- Iceberg lettuce , hand torn1 small
- Vinegar 2 tablespoons
- Salt to taste
- Black peppercorns, crushed 5-6
- Pickled gherkins, chopped 6 small
- Dried rosemary1 teaspoon
- Mixed herbs1/4 teaspoon
- Brown bread crumbs 2 tablespoons
METHOD
Roast onions over direct flame. Cut them into one-inch square pieces. For dressing mix together vinegar, salt, crushed black peppercorns, pickled gherkins, rosemary and mixed herbs and set aside. Mix together bread cubes, capsicum, onions, tomatoes and iceberg lettuce in a bowl. Just before serving add the dressing. Garnish with toasted brown bread crumbs and serve immediately.
