Barbecue Prawns With Ginger and Mango Mayonnaise

Ingredients For Barbecue Prawns With Ginger and Mango Mayonnaise :
  • green tiger prawns, peeled, leaving tail intact, deveined :     4 kg
  • lemongrass, white part only, finely chopped :     1 stalk
  • kaffir lime leaves, finely shredded :     4
  • peanut oil :     2 tablespoon
  • mango, peeled, stoned, finely chopped :     1
  • finely grated fresh ginger :     1 tblspn
  • lime juice :     1 tspn
  • egg yolks :     2
  • mustard powder :     1 tblspn
  • vegetable oil :     1 cup

Preparation Method for Barbecue Prawns With Ginger and Mango Mayonnaise :

Take a bowl and combine the prawns, lemongrass and lime leaves.

Cover the mixture with a plastic and wrap it well. Then keep it in the refrigerator for 1 and 1/2 hours to marinate.

For preparing the mayonnaise, in a food processor bowl put the mango, ginger, lime juice, egg yolks and mustard powder and process until smooth. Add oil until the mixture is thick and pale. Add salt and pepper for taste and season.

Preheat barbecue on high.

Add the prawns and cook, turning occasionally, for 5-7 minutes or until prawns curl and change color. Reserve one-third of the prawns, cover and place in the fridge to chill.

Transfer remaining prawns to a serving platter and serve with the mayonnaise.
